Just in time for Christmas! If a candy cane craving sneaks up on you this festive season, go one better with this delicious sugar free peppermint chocolate cake. Easy to make and a great dessert to bring on Christmas day as it’s a real crowd pleaser.
So here’s how to make it!
What you’ll need:
125g unsalted butter
1 cup self raising flour
1 cup glucose powder (dextrose)
2 lightly beaten eggs
1/3 cup cocoa powder
1/2 cup milk
1/2 tsp vanilla essence
1tsp natural peppermint essence
1 cup of peppermint sugar free dark chocolate
1 cup of thickened cream
Mint leaf (for garnish)
What to do:
Preheat oven to 180 and grease a regular cake tin.
Melt butter (do not boil) butter in microwave.
Sift flour and cocoa butter together in a bowl.
Add glucose, eggs, milk, essences and butter.
Beat with an electric mixer for 4 minutes (make sure batter turns a slightly lighter colour).
Pour mixture into tin and back for 35 minutes.
Place a heat proof bowl on top of a double boiler and bring water to boil.
Melt 1 cup of sugar free peppermint dark chocolate and 1 cup of thickened cream together in the bowl.
After choc and cream is just combined place in the fridge and allow to cool for 1 hour or so.
Every 15 mins whisk so icing remains a smooth and fluffy consistency.
Allow cake and icing to completely cool before icing.
Garnish with mint!
