Apple and cinnamon barley pudding

Hi peeps,

A few of you have been asking me for the recipe for this delicious sugar free pudding dessert. So here tis!

What you’ll need:
225gms of pearl barley
2 apples thinly sliced
3/4 cup currents (or raisins or sultanas, what ever you like)
1/2 cup dextrose
Juice of 1 lemon
2 teaspoons cinnamon
About 1/8 cup of cubed butter (tiny cubes)

Fresh out of the oven… mmmmm small the aroma

What to do:
Preheat oven 180deg
Prepare the pearl barley as per instructed on your pack (this usually means soaking overnight or boiling for 45mins)
Drain excess liquid away from barley
Put all ingredients (except butter) in a large mixing bowl and combine well
Pour into a baking dish for the oven and place the cubes of butter across the top
Cover with foil and bake for 1 hour

How to serve:
Serve with thickened cream or some sugar free ice cream

    • No added sugar in the currants but yeah check the pack. Maybe you could use pears instead of apples? Any stone fruit would do I guess.
